We make our fudge in a fudge kettle which is basically a large mixer surrounded by a water jacket. The various ingredients are added to the kettle and mixed together whilst being gently heated.
When the fudge is ready it is either poured into trays to cool and set, mixed with another fudge to make one of our delicious combination flavours and swirls, or additional ingredients such as ginger or nuts are added.
